Hi! My name is Jackie (is that ever not awkward!?)
Let’s start over.
When I was a little kid, I used to watch my mother float around the kitchen, seamlessly executing the perfect meal (unless it was homemade pizza dough…hey, we all have our flaws). She made it look so easy, but mostly, she made it seem so fun. I admired the way my father got excited for his favorite meal. My friends jumped at a dinner offered by “Mrs. T.” Dinner guests would sit around after eating and rave. Family craved her Christmas Prime Rib. I wanted to be the one whipping up that comfort dish my family member was dying for after a long day. I wanted my mother to teach me everything she knew about cooking and I wanted to hear her stories about how she learned how to cook from my Mema. And to be fair, she raised me to be a complete food snob, so I had no choice but to learn how to cook so that I could provide myself with the quality of food my heart (and tummy) desired.
Cooking, to me, is far more than following a recipe. It’s using a recipe as a guideline and then letting your creativity flourish. I’m a believer in “a little bit of this and a little bit of that.” My favorite rule of cooking is that there are no rules. Cooking is my escape, my comfort, and my joy. It’s about bringing your family and friends into the kitchen, putting your phones down, and enjoying one another’s company. A few of your loved ones, a good conversation, a hot meal cooked in a messy kitchen, and a bottle of Malbec (for good measure) – now that’s my favorite recipe.
